Notes from Isolation Week 6 & 7
Make :

In a large bowl thoroughly mix the listed ingredients. One 500g pot of quality Greek yoghurt. Then using the yoghurt pot, add two pots of oats and one pot of any combination of fruit, nuts and seeds. Walnut, prune, poppy and sunflower seeds recommended. Add two heaped teaspoons of bicarbonate of soda, two eggs and a hefty pinch of sea salt (or two). You can also mash in a ripe banana if you have one. Add a splash of oat milk and mix thoroughly.
Line two bread tins with baking parchment. Fill with the dough and firmly tap to make sure there’s no air bubbles. Smooth out the top and slice lengthways to help it rise.
Bake at 180 degrees centigrade for 45 mins until golden brown. Leave to cool in the tins for 5 minutes before removing and transferring to a wire rack. Allow to completely cool before diving in.
Julius recommends slicing and freezing the second loaf to extend its life. This bread is great toasted and is fantastic with anything from jam and honey to paté and poached eggs.
