Notes from Isolation Week 3

This week’s notes from me and a coupla friends :

Make :

Fi’s Roast Chicken and Anchovy Aioli Sandwich :

Leftover roast chicken

1 lemon

Several cloves of garlic (1 for the aioli and 3 or so inside the chicken)

1 egg yolk

1 tsp of mustard

A tin of anchovies (as many or as little as you like) 

300ml of vegetable oil

Salt and pepper

Crusty white bread

Salad – rocket, spinach or lettuce.

  1. Rub your chicken with salt and pepper and olive oil and stuff the cavity with half a lemon, a couple of gloves of garlic and any herbs that you can get your hands on. Roast it for about an hour and a half at 180 degrees depending on the size of your chicken

  2. Mix the egg yolk, mustard, the juice of half a lemon, a garlic clove and a pinch of salt together and very gently pour in your oil. You might find that you don’t use up all of your oil, but don’t worry it’s better to be careful, because adding too much, too quickly can make it split. You can make the aioli with a hand whisk, a blender or in a food processor … Once your aioli has thickened you can add your flavourings to make a lemon aioli, mustard aioli or garlic aioli, the choice is yours - I followed Tin Can Magic’s inspiration and finely chopped some anchovies and added it to the aioli mixture. 

  3. Next, cut a couple of slices of freshly baked bread, slather it in aioli and add your chicken and salad. Delicious!
