Prawn Linguine
For 3 people: add 300g of linguine into boiling water and while it cooks in another pan fry a couple of cloves of crushed garlic and a chopped red chilli in a glug of olive oil. Then add a handful of halved cherry tomatoes and cook until they have started to soften, follow with a generous splash of white wine. Now add the prawns (making sure to shell and de-vein before) giving the pan a good stir to combine the ingredients. The linguine will be ready, as you drain be sure to save a bit of the pasta water to add to the other pan. Stir the prawns and tomatoes through the pasta along with a handful of chopped parsley. Serve with a squeeze of lemon.
