One-Pot Roast Chicken with Fennel and Lemon
Roast chicken is forever a meal that will spark joy for me. I am not alone in thinking it is one of life’s great comforts. This one-pot inspired by Julius Roberts—Instagram’s Tell Tale Food is really lovely. The chicken sits atop the veg, its juices dripping below, cooking and crisping the potatoes, whilst the fennel, lemon and garlic infuse the bird.
